Owners of the popular Louisville breakfast spot, Wild Eggs and newly opened Wild Rita’s Modern Mexican and Tequila Bar have decided that they’re not busy enough. Shane Hall and J.D. Rothberg are opening yet another restaurant here in Louisville, this time it’s a fast casual Italian restaurant called Strati Wild Italian, and it’s coming to the Highlands.
Strati Wild Italian will take over the space formerly home to Sitar Indian Restaurant at 1702 Bardstown Rd next to Sapporo. The concept will be exactly what it sounds like: Qdoba for Italian food. Customers will be able to build their own pastas, salads, and Italian wraps in the sort of assembly line fashion for which fast casual restaurants are known. You can also count on seeing vegan and gluten free options on the menu, as well as daily special dishes. Beer and wine will also be served.
According to Business First, Strati Wild Italian has been in the works for two years, and they are planning to open six locations across the area over the next two years. I think this sounds like another great idea from the Eggheadz, LLC duo. I can’t imagine them opening anything but a quality establishment at this point. I have no idea what their time frame is, but the space hasn’t been touched yet, and I know that they are planning a serious buildout, and of course, a colorful interior. Stay tuned for more!
